Cooking: Chicken Camirillo

Chicken Camirillo
6 boneless, skinless chicken breast halves
3 tablespoons butter
2 avocados, peeled, sliced
1/2 teaspoon grated gingerroot
1/2 cup chicken broth
1/2 cup whipping cream
1 small onion, chopped
1/4 cup butter
1/4 cup crumbled, cooked bacon
In a skillet, saute the chicken in 3 tablespoons of butter for about 10 minutes. Remove from heat.
In a food processor, blend avocados, gingerroot, chicken broth, and cream until smooth. Saute onion in butter until golden, then add to avocado mixture.
Place cooked chicken breasts in a lightly sprayed baking dish. Pour the avocado mixture over chicken. Top with crumbled bacon. Bake at 400 for 20 minutes.
Extra fun notes and substitutions!
From much painful experience, do NOT use a 2 quart casserole dish, use a 9x13 baking pan. This spreads out the chicken and makes sure that it actually cooks. -_-;
One or two bag of bacon bits works wonderfully, and cuts down on a lot of work. So does substituting onion powder for the onion; all you have to do is add the appropriate amount to the blender with everything else. For that matter, since no one here is a coffee drinker, I use ordinary skim milk instead of cream and haven't had a problem yet. It still tastes delicious, and I don't have a mostly full carton of whipping cream sitting around guilting me afterwards.
When the recipe says cook for 10 minutes, that's pretty accurate. It's better when the chicken hasn't fully cooked, so that it doesn't dry out while baking.
I usually (...when I remember) put some aluminum foil over the top, and remove it before popping the pan back in for 5 more minutes at the end; otherwise the avocado gets kinda crusty but this way the bacon gets nicely crispy.
Finally, this can make for a wild homemade pizza! Use precooked diced chicken instead of taking the time to saute the chicken breasts (or a pack of tenderloins). Get a pre-made PRE-COOKED pizza shell - if you get just the dough, it might not cook thoroughly. Combine the diced chicken and the avocado mixture, then put a nice layer of this on the pizza shell. Add a light layer of your favorite cheese (I recommend a mozzarella/provolone mix with a light dusting of cheddar), and bake until cheese is melted (there's usually a recommendation on the pizza shell package).
